Our shelf kit creates a second level in the Proofer, ideal for proofing two sheet pans or four loaf pans.
Sheet pans should be 36cm x 30.5cm (14” x 12”) or smaller.
Loaf pans should be about 3” tall while using the shelf-kit, so that the maximum height of the risen bread is 10cm (4”).

Good Product Proofing your dough during cold saeason is not an easy task. Since I live here in NY, it’s been always a pain especially during holidays. Good thing B&T is there to save the day. Now even in snow storms or even in 30’s or 40’s, I can even proof my bread with no sweat.

Better Control Over My Time Using the proofer makes it easier to schedule my baking, because I can rely on my sourdough starter being ready to use at a predictable time, and it has shortened my bulk fermentation time. Legs are in the way The old style of the shelf kit used to hang from the sides of the proofer box. This shelf kit sits on the lower rack. My pan no longer fits on the bottom because of the legs. I will need to find a smaller pan to fit on the bottom.

Fantastic Customer Service I bought the Proofer for my husband as a gift and he’s been very happy with it. We’ve used it on a variety of things and its worked great each time. The thing I’m most impressed with though is the customer service at Brod & Taylor. After ordering, our package was lost for a couple of days and the folks at Brod & Taylor were so helpful, they totally went above and beyond to reach out to the delivery company for us, had a back up plan in place in case the package was totally lost and continually checked in with us throughout. Useful I like the size. I use a lot of stainless steel (prefer 18/10) and alloys for cooking, food prep and baking. This rack is OK but it could be of higher quality.

Additional shelf This foldable proofer has been the best tool in my sourdough chest. Add the additional space to put more items in the proofer and you have a win,win!!! When I saw this setup I knew it would be a winner but never knew how much till I bought it and put it to use. You simply cannot go wrong with purchasing this tool. It not only supercharges sourdough making but I’ve made my own yogurt, it’s so easy!!! I would use it as a slow cooker but I already have several size crock pots at my disposal. I love it!! I bought this product because it came highly recommended by widely acclaimed bread bakers. I couldn’t be more pleased with the proofer – and the accessory shelf allows me to fit more items inside. That is critical when you have several recipes going at once. In winter, we keep our house at about 68 degrees fahrenheit – too cool for proper bread proofing. Using the proofer allows me to achieve the best baking results.

Great unit works great and as expected. Very sturdy. Fast shipment and now can easily double the capacity of the bread warmer! I initially used a plate on the top of the first basket, and put the second basket on the top, but noticed that the temperature was not consistent in both baskets, since there is no air circulation. This shelf works great!

A great invention! I bought this proofer because my regular oven’s proof function won’t go below 85 degrees — too hot. I love it! When not in use, it quickly folds into a flat package about the size of a Monopoly game, so it’s easy to store, yet big enough for proofing bread or even a pan of focaccia. The controls are simple and intuitive. I haven’t tried the slow cooker function. But I’ve had it for a couple of months, and am extremely pleased with it.

Works like a dream I also purchased the shelf that fits inside. Each Christmas I make stollen, which has a lot of butter, sugar and fruits. Sometimes, with winter temperatures, it didn’t rise. I’ve made 2 batches to give away, 4 small loaves to 1 pound of flour, and rising the bread at 82F is so very easy. I also made sourdough bread in a Dutch oven, twice, and it too worked so easily. This makes the rise so predictable and efficient! I am hooked.
